The Low Country Boy goes to Low Country



It was a crisp Sunday afternoon in the city. I was delighted that a business meeting called  for me to have brunch at a restaurant interestingly enough called Low Country. Now of course being born and raised in Charleston SC this absolutely peaked my interest. I told my friend I was with, up until that point, I had yet to find anyone that did Charleston/southern food REALLY well up here. However, with a name like Low Country, I was sort of thinking that it may have been a bit contrived in their derivation and presentations. Boy was I wrong. They have hit it on the head in every direction.


At my brunch table was a PR associate that actually attended USC and knew Charleston very well along with 2 other friends who were not at all familiar with the art form of southern cuisine. The PR associate made a comment to me that there was no where she had been that had gotten the staple shrimp and grits correct. She cautiously ordered it. It was served with cheesy grits, andouille sausage and a tomato based gravy. She was delightfully pleased with hers.



For any of you that know me on brunch. . . as with most things, I am a creature of habit. I always look for the Eggs Benedict. Theirs was served with country ham and a Texas Pete based hollandaise. It was quite savory. My one complaint when using country ham is that it tends to be so incredibly salty.  Don't let the complaint fool you! I was hungry and ate every bite. I did however find it odd that no where on the menu allowed for hash browns, home fries etc. The only thing I saw was french fries.

My friend ordered the big breakfast biscuit that came with bacon and scrambled eggs. It was very big dirty biscuit-esque a la Hominy Grill.


the decor is quite interesting. It's low key with a big display in the back of various types of bourbon that they sell. The music could not have been any better in my opinion. It was Stevie Wonder into Diana Ross. I even heard a Chairmen of the Board beach music song. I looked up at my new friend who had attended USC and said "OMG they're so playing beach music  in here!!!"

Lowcountry gets it right in almost every aspect of the word. I will say that service was a bit off. She was sweet. . . just not very attentive. I will also say that it was surprisingly slow and quiet in the restaurant today. I am not sure why people have not found the place yet. I can only bet that it will not be a secret for long.

Let's Go Wedding Trending!!!

“I want the reception to be different. . . I want it to stand out. . . How can I do something cool?” These are the questions that I hear time and time again from my brides.

I often suggest creating a signature station of some type. Specialty stations such dessert bars, candy bars, cognac and cigar bars, barista stations, and  wine bars are all options that I have offered in the past.


Budgets are tight in this economy so we are seeing a lot of brides go back to the standard 3 course seated dinner. However, there is still a trend of having one or many specialty stations following dinner.

Brides are opting to lose the wedding cake and replace it with varied choices from a creatively designed sweets bar. I like to do these bars on several levels and I also like to use whenever possible whimsical colors that take us back to our childhoods. Let’s face it, the saying kid in a candy store still has meaning even today!

One of the other assets of using a candy/sweets bar is that it gives the guests  the ability to enjoy a variety of items at their leisure.
 What started as cupcakes and then the playful candy bar has now emerged into a course that offers wide varieties of after dinner sweets options. From small tarts, pies and cakes, to signature jelly beans, initialed m&m’s all the way to creative pastry chef driven items, the possibilities are endless.


I always offer guests a uniquely created bag or small box that they can help themselves to the bar and then of course have the option of taking it home with them.  I enjoy pairing  the  dessert bar with a barista station and offering some fun blends of coffee for all to enjoy.


Another growing trend is that comfort/drunk food at the end of the night. Let’s face it, guests have enjoyed an open bar and have been having a good time. Some times in fact, too good of a time and they may be a little tipsy. You don’t just have to pass the same old tired foods.

 I like to add some flavor to our events and incorporate one of the hugest trends in the country and that’s offering street foods. Now if the event is an outside one, I will have a food truck pull up towards the end of the night and start serving. It creates such a cool vibe. I have even had a scenario where I had multiple food trucks arrive to offer a variety of street foods. Savory crepes,  fresh cut boardwalk style French fries, portabello fries, gelato, grilled paninis. . . the possibilities are endess! 

I like to often add the extra touch of some street performers roaming. Fire Breathers, stilt walkers, unicycle riders, caricature artists and you have a brilliant and memorable end to an amazing celebration!

Designer Tastes on a Budget. . .OH MY!

One of the challenges of our business is to give our clients exactly what they want at all times. After all, I am the artist that has to get into the head of our client and paint their picture to achieve the overall marketing goal of the event. With some clients it is quite easy because funding is limitless and the sky literally is the limit.

However, most of the time, it is my job to help figure out a way even on a budget to achieve the said aesthetic. Here are a few ways that you can still have a lovely event with out it breaking the bank.

Save the Bar: of course one of the biggest key elements to any cocktail event is the bar. Now it is no surprise that this can be a huge ticket item. Open bars for 3-4 hours in itself can be thousands of dollars. Then you have to add in the necessary labor to support the bar as well. My suggestion is if budget is an issue, simply offer a selection of 3 beers, a red and white wine that is tasty but is not incredibly expensive and then one signature cocktail that is available. A helpful hint to this would be to not make it too sweet. People will be more inclined to have more than one. It's a simple and effective way to cut corners while not looking cheap.

Share Share Alike: be sure to ask your planner if there is anyway that you might share the cost of rentals with a client that may be just before your event or just after your event. You can get great discounts on multi-day event rentals from all kinds of companies such as tent rental, audio visual, glassware, tables and chairs etc.

Utilize the Entertainment: instead of hiring someone completely different from your party band to play piano or guitar for the cocktail reception, utilize what you already have. You will get a much better rate. The band is already there, so use one of their guys to fill in the gap.

Schedule your deliveries during normal business: if you have the ability, make sure your rental companies are coming to drop off your items during the week and picking it up during the week. There are always extra fees added for special drop offs and pick ups. You can save tons right here!

Fall Design Trends

As the season begins to change for cooler more temperate weather, the first thing I do is put up the white clothing, linen and the sear sucker pants. Now I will leave the sear sucker jacket out to be rocked with jeans! (Just Saying).

However, that aside, it gets me thinking of some of the latest trends towards colors and design ideas for both weddings, social and corporate events.

I have found a rather interesting array of colors to be popular this Fall and Winter. Take a look and I will offer insight to each for you.

Purples are huge this season especially with both candles and linen options. Now remember, I'm not speaking of Lavender, but more over real violets or purples.

Harvest orange is being seen in a lot of accent work with both florals as well as center pieces. Think cornucopias without doing the obvious.

These are 2 of the biggest colors we are seeing this season. I will showcase  more as we go into 4 varying scenarios of event trends.

TREND 1:

Vintage is bigger than ever this season. For instance wedding dresses with cap sleeves. Vera Wang who of course did the Kardashian wedding shows off her thoughts on this lovely vintage concept.
Other things adding to a vintage style wedding would be to have it take place outside. You can even go so far as to take it and do it in a back yard to add that home style vintage vibe.

One of the biggest trends that remains strong is our eco-friendly wedding.
In 2011, we’ll continue to see more green, environmentally friendly weddings. Think second-hand and vintage wedding dresses.

 recycled paper invitations and programs:




 Catering is often done with local farms providing fresh items to the caterer. Farm raised and grown always tastes so much better. Heirloom tomato bisques, Pulled pork BBQ canape on a corn bread round, and the list just goes on and on.

 Charity donations will continue to be a popular option instead of traditional wedding favors, and more couples will be asking for donations to their favorite charity instead of wedding gifts.


The Modern Wedding:

With both our wedding divisions making huge plays for this during this season, I thought I would share a few thoughts on some of the things that are happening.

 Our brides are opting for non-traditional dress choices, such as: beautiful hues instead of the usual white or ivory; old shoulder instead of strapless; and short cocktail dresses (the little white dress) instead of a long gown.





This trend will continue through décor, as well, with couples steering away from the customary 10-person round table and opting to mix table shapes and sizes.  The use of farm tables as well as squares and rounds is something we are using often.

One of the largest trends we are seeing with our modern brides is setting up after parties for everyone. This is especially true with destination weddings. No one wants the party to end. WE are finding that the couples are often reserving VIP rooms and sections in lounges and nightclubs and keeping the party going all night long.

Another fun option for the modern bride is that they are letting their brides maids choose their own style dresses to wear as long as it keeps with the color scheme. This is not the norm. However, it certainly is cool!

Social Media:   We hear about it in our daily lives. This is something bigger than facebook or twitter. Brides are creating their own wedding website that they can update daily and keep their guests involved step by step. Guests love reading how the planning is coming along.  There are tons of resources out there to do just that.

Lawson's Labor Day Potato Salad

Growing up in the south, it was always a tradition to have potato salad. I personally never really enjoyed the sweet potato salad with the pickles. I took it upon my self to create one that I have taken to party after party and it gets rave reviews. This is something you can even get done today for an event this afternoon or this evening.

Serves 6-8

10 Russett Potatoes
5 celery stalks
1 red onion
1 package of bacon
1 small jar of dukes mayo
1/2 bottle of ranch dressing
3 tablespoons of regular yellow mustard
1 tablespoon of dijon mustard
Lawry's seasoning salt
garlic salt
black pepper


Boil the potatoes until they are completely cooked through. You can always tell by sticking a fork in them. while this is happening, cook the entire package of bacon. save some of the drippings for later too.  Make sure bacon is crumbled and put in a bowl for later. pre-chop your red onion and celery and stick in very large mixing bowl. Put your crumbled bacon in the bowl as well. Once potatoes are cooked drain out of the water and place them in the mixing bowl. With a knife start cutting up the potatoes. Remember you're not making mashed potatoes so there is room to have some lumps! Add just a splash of the bacon drippings then add the mayo, ranch, 2 mustards, and seasonings and mix together. Stick in the refrigerator for an hour and you're ready to serve.

Happy Labor Day Recipes that are EASY!!!! ENJOY!

Lawson’s Famous White Sangria:

Ingredients
3 tablespoons sugar
3 shots  apple liquor
1 lime, sliced
1 lemon, sliced
2 ripe peaches, cut into wedges
3 ripe green apples seeded and cut into wedges
1 bottle white Rioja Spanish wine or other dry white wine
1 pint raspberries
Sparkling soda water, for topping off glasses of sangria at table
Directions
Combine sugar, apple liquor, lime, lemon, peaches and apples in a large pitcher. Cover with 1 bottle of Rioja wine and chill sangria several hours. To serve, spoon fruits into glasses or goblets, adding a few fresh raspberries in each glass, pour wine over top of the fruit. Top glasses of sangria off with a splash of soda water and serve.

Southern by Birth. . NYC for the LOVE and "The Help" because of needed obligation.

I grew up in a town called Charleston SC. It is greatly known as being the start of the Civil War and more over these days for brilliant epicureans like Sean Brock from Husk Restaurant which just won the best new restaurant in the country from Bon Appetite Magazine.  However growing up down south, I had the pleasure of having a second mother. A woman that not only helped to raise me, but she practically for all intents and purposes did raise my mother. Before her death some years back, she had been working  for the family for over 44 years!



I will never forget the evening my buddy and I went down to 42nd to catch a movie and the preview for The Help came on. I almost immediately got teary eyed. He was like "what is the hell is wrong with you?" I said that I must absolutely see that movie. He coming from the north, really saw no relevance to the meaning of it. He even commented " what's the big deal?" I very quickly told him. . . .not not a movie, that's a reality and one that I lived!



I had taken a week out of the city to come back down and meet with some of my fabulous southern brides and decided to take my mother to the movie. It was, as expected, moving. Being that I am certainly not a movie reviewer, I won't get into how much I thought the writing was brilliant and the character work superb. I thought I would actually enlighten some about the relationships we southern boys have with our nannies.

Always let it be said, I am certainly a mama's boy. Well Miss Rosa had a lot to do with me coming up the way I did as well. She grew up on a plantation where her parents picked cotton and grandparents like in the movie were actual slaves. It is so hard for me to believe that this kind of thing happened. The simple idea of racism just turns my stomach. However, it was the mid to late 70s and she was brought in to give my mother a well deserved break. My grandmother sort of allowed her to come over to our house and watch me and allow my mother some sanity. . .as no one is probably surprised I was kind of a type A baby!

 Well little did I know from the baths she would give me to my watching from a stool with her making fried chicken, that Rosa would play such a brilliant part of who I am today. Moreover, as previously stated she all but raised my mother.

So seeing The Help, brought back a ton of really amazing memories and more over some southern recipes that I thought I would share out of the August edition of Food+Wine Magazine. Please enjoy the recipes and I am thrilled to have shared a little of my southern heritage with you. YES this is where I get some of the little bit of a southern accent I have left!

Minny's Chocolate Pie
INGREDIENTS

1 packaged pie dough crust, such as Pillsbury
1 1/2 cups sugar
3 tablespoons unsweetened cocoa powder
4 tablespoons unsalted butter, melted
2 large eggs, beaten
3/4 cup evaporated milk
1 teaspoon pure vanilla extract
1/4 teaspoon salt
Whipped cream, for serving

DIRECTIONS
Preheat the oven to 350 degrees. Ease the pie crust into a 9-inch pie plate and crimp the edges decoratively. Prick the crust lightly with a fork. Line the crust with foil or parchment paper and fill with pie weights or dried beans. Bake for 15 minutes or until set. Remove the foil and weights and bake for about 5 minutes longer, just until the crust is dry but not browned. Meanwhile, in a bowl, whisk the sugar with the cocoa powder, butter, eggs, evaporated milk, vanilla and salt until smooth. Pour the filling into the pie shell and bake for about 45 minutes, until the filling is set around the edges but a little jiggly in the center. Cover the crust with strips of foil halfway through baking. Transfer the pie to a rack and let cool completely before cutting into wedges. Serve with whipped cream
 
SOUTHERN FRIED CHICKEN:
INGREDIENTS
One 4-pound chicken, cut into 8 pieces
2 large eggs
1/2 cup whole milk
1 1/2 cups all-purpose flour
1 tablespoon seasoned salt, such as Lawry's
1 teaspoon seasoned pepper, such as Lawry's
24 ounces solid vegetable shortening, such as Crisco

DIRECTIONS
Pat the chicken pieces dry and line a baking sheet with wax paper. In a large bowl, whisk the eggs with the milk. Add the chicken. In another bowl, whisk the flour with the seasoned salt and seasoned pepper. Dredge the chicken in the seasoned flour and transfer to the baking sheet. In a 12-inch, cast-iron skillet, heat the vegetable shortening to 365 degrees. Add all of the chicken and fry over moderate heat, turning occasionally, until deeply golden brown and an instant-read thermometer inserted nearest the bone registers 170 degrees, 20 to 24 minutes. Drain the chicken on paper towels and serve right away.

Fire Island Saturday for The Trevor Project: Ooh what a party!

As I continue making introductions in New York I have found some really brilliant charitable organizations that we will be supporting. Flash back to a couple of Wednesdays ago when I walked into a huge board room at 7:00 in the GM building. It was for new members of a charity called The Trevor Project.

I remember being on the couch and tears rolling down my face after watching that ad. I also remember wanting to find a way to make a difference. The Trevor Project's mission statement is:

The Trevor Project is determined to end suicide among LGBTQ youth by providing life-saving and life-affirming resources including our nationwide, 24/7 crisis intervention lifeline, digital community and advocacy/educational programs that create a safe, supportive and positive environment for everyone.

 I immediately knew that this was a charity that I and my company would embrace. That said, I was not supposed to have been in town for their Summer fund raiser, however, as it turned out I was and I got to kill 2 birds with one stone.  I am no longer a Fire Island Virgin and I worked on a really fabulous event. Join me as I take you through this fun day and into the night!!!

the morning started about 7:30am grabbed some coffee. I headed to Penn Station to meet my friend Ben Watson to take the jaunt (I use that word loosely as it takes about 2 hours) out to Fire Island Pines. It was somewhat comforting to me to have a pal to go out there with. It seems just making sure you are on the right train is a task and a half.  It is rather convenient that they sell package deals at Penn Station. For $31.00 you can get round trip train service and ferry service to the island.

We boarded the first train and off we went. We got to the ferry about 90 minutes later. . the smell of the salt air brought me right back to Charleston SC where I am originally from and still have an office. We boarded and off to Fire Island we went.

When we got off the boat, I totally felt like I was fresh off the boat. This was my first rodeo. Imagine an island that was so accepting and this particular part of the island  all gay men of every size, demographic and age.  We walked in to grab some breakfast and it was like a veritable nightclub going on in the line to place your order for food. Gaga was on the sound system and people were bobbing their heads over coffee and their lox bagel and cream cheese. Where in the HELL was I?!!!

Well we headed to the event space and wow what a view!


As always there was a great amount of work to complete before the guests arrive. I went right to work along with a team of amazing volunteers to create the Bollywood inspired Splash pool party. the event featured 3 bars, 2 special performances and approx 350 guests.


The first performance was done a choreographed lady gaga number set to Bollywood inspired beats. I caught a bit of their rehearsal.


The event was a resounding success raising over $30,000 for the charity. I hopped the ferry back to the city to prepare for what was next. . .an evening out. I have to tell you. . .I have never lost my southern roots. . I did think that I have lost my accent though. However, as it was so clearly pointed out at a dinner party, my accent is still very Charleston after a couple of cocktails! I embraced it  and went out southern style to meet some new friends. That is exactly what happened.

one of my favorite watering holes in the city is this little place in Hells Kitchen where celebrities, Broadway stars and everyone else co-habitate into one fun small room. Great wines by the glass, creative cocktails. It's called Hour Glass.  Check it out sometime.

Last night I ran into Andrew Rannells the star of the run away Broadway hit musical Book of Mormon.



  He was hanging out with a couple of friends. Then in walked this 6 foot 7 tall guy. . . .turns out he is in My Big Gay Italian Wedding; Brent Heuser.  Well we got to chatting, and ended up meeting him across town at this cool little piano bar called Uncle CharliesI of course jumped up on the piano played a few songs and called it a very rainy Saturday night.


There is always something fun and creative to do in the city. I welcome all of my new friends that I am meeting along the way and so proud to be able to support such wonderful charities.

Gay Weddings are Chic and Fabulous in the City

It is such an exciting time in New York with the legalization of Gay Marriage. It got me to thinking just how creative we can get and more over what are some the latest trends on what I'm seeing our clients really taking a liking to.  I have to say it's really fabulous for me because we get to really recreate the wheel  to do all kinds of new and exciting things, while remaining as classic and traditional as our clients wish.



We collaborated with the Gay Wedding Institute to offer some of the hottest trends for you to enjoy. I was so pleasantly pleased to see that many of these same trends we have already offered some of our upcoming wedding clients in the city and beyond.


With the idea of celebration, guests are seeing pre-ceremony champagne and signature drinks offered for about a half hour prior to the ceremony. I have even seen full open bars being offered. It first sets that celebratory vibe but also can take the edge off of any guest that is not 100% excited to be attending a gay wedding. One must think of everything!!!


The use of candles have really taken the place of florals for decor. I particularly love this idea. It's one of those ideas that can be as classically elegant chic or even lend itself to a more edgy look.
Clustered candles as centerpieces. Floating candles. Candleabras. A series of pillars clustered.

 2 aisles continue to be a huge trend. It is quite a lovely metaphor as well. 2 becoming one. Think about it. This also allows for unique and individualized aisles as well. This also gives the bride and bride and groom and groom their own space. Tres Cool!

Make it a Wedding Weekend! This has been a trend for all of my clients recently. It seems that with more and more destination weddings, people want to come for the entire weekend. Now I know what you're thinking. . rehearsal dinner and brunches. . .oh it's so more involved than that. . think day trips, wine tastings, obstacle courses, group outings baby!

Dresses for the brides are anything but typical. I have even seen little black cocktail dresses being worn. It's simply saying to the guests. . . expect the absolute unexpected.

So no matter your taste or style, things are very exciting in the city and I am so thrilled to be right in the middle of it all offering our signature creative style to any wedding. GLAAD Roof Top Event. . A hot time in the city!

Well it's been a week now that I have been feverishly working on the new event division up in New York. I really truly feel that everything that I have been doing up until now is all coming together to make this venture a resounding success. With that being said, I am a huge supporter of a charity called GLAAD which is an acronym for The Gay and Lesbian Alliance against defamation. Their website states:

The Gay & Lesbian Alliance Against Defamation (GLAAD) amplifies the voice of the LGBT community by empowering real people to share their stories, holding the media accountable for the words and images they present, and helping grassroots organizations communicate effectively. By ensuring that the stories of LGBT people are heard through the media, GLAAD promotes understanding, increases acceptance, and advances equality.




Tuesday Night they had their annual Summer fund raiser at 230 5th avenue on the rooftop. It could not have been a more beautiful night. I wrangled myself a cowboy for a date. . well the Cowboy. . being Randy Jones the original cowboy from the Village People.


We arrived and did the red carpet entry where media took pictures and asked a bunch of questions. Randy was happy to report that now that Gay marriage is legal in the city, he is being ordained as a minister and will be more than happy to do any wedding. . I think the caveat is that he has to sing Y-M-C-A at the reception!!! Randy made a wonderful date as expected as he knows everyone and is always so kind to introduce me to all kinds of fabulous people. As we rolled upstairs we were greeted by throngs of people.

Servers passing Brazilian inspired menu items, cocktails flowing. . and great music all equate to a really fabulous event. As the evening progressed cooler temperatures prevailed and the party was really getting HOT! I ran across Lance Bass who was enjoying himself with friends all for a good cause.

As an event producer, the devil is always in the details. I stepped back for a moment took a deep breathe and realized that I was in one of the most beautiful cities in the world. Can you imagine having this as our view the other night?
Even the flowers that were the back drop of the bar were both colorful and beautifully lit.


The evening continued on with silent auction items and guests sitting back and enjoying the breeze. I am truly honored to be working in a city such as New York. Now to be able to offer our services for GLBT weddings and be able to add that special creative touch that we are known for continues to excite me.

You never know who you are going to meet at these events. These guys are in television production.


at the end of the event we were invited to a club called La Pomme to enjoy a cocktail. From there I took Randy and company to one of my new favorite watering holes: Hour Glass for a glass of wine. I ran into Broadway performer Brandon Wardell. . who I had known from Charleston. As should every good bar, Beth, the owner keeps a keyboard and an amp upstairs in her office just for these kinds of occasions. We set it up and in typical New York style, I was entertaining on piano while Broadway voices sung to the wee hours of the morning.
