As the summer months approach, you, like myself may be
starting to look in the mirror and think it’s time to start eating healthier.
Swimsuit season is upon us after all! Here are just a couple of produce items I
have experimenting with in order to get in shape for summer.
Spaghetti Squash with Parmesan
-Cut one large spaghetti squash in half, long ways
-Scoop out all the loose insides and throw away
-Place it face down on a cookie sheet
-Bake in a 350 degree oven for 20 minutes
-Once the spaghetti squash is soft, use a large spoon and
scoop the squash out of the rind
-Sprinkle with olive oil
-Shred Parmesan cheese on top and enjoy!
*Add shrimp or chicken for extra protein*
*In a hurry?? To save time, cut the spaghetti squash long
ways and place face down on a microwave safe plate. Microwave on high for 5 ½
to 6 minutes.
The Spaghetti squash will come out in strands, similar to
spaghetti! It’s a great way to replace regular pasta with a healthier, lower

Cucumber and Vinegar Salad
Yesterday afternoon I whipped up a quick snack. I made my own version of this cucumber salad and loved it! All you need is...
2 large cucumbers
1/2 onion
1/2 cup white vinegar
3/4 cup water
1/4 sugar
Dried dill...as much as you prefer.
-All you need to do is heat the vinegar and water in a saucepan, just before it boils. Add the sugar and stir.
-Slice up the cucumber into thin pieces and the onion into short strands. Place in a bowl and toss.
-Add the vinegar/water/sugar mixture to the bowl and stir. Sprinkle on the dried dill and place in the fridge until it’s cold.
